• 5-6 links (one package) of sweet Italian sausage, you can use the spicy Italian sausage if you like it hot.
  • 1 bag fresh spinach
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 cup of cauliflower rice
  • 1 package of gnocchi pasta (optional)
  • 3 tablespoons of dried basil
  • 1 tablespoon of oregano
  • 1 tablespoon of thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 3 tablespoons of tomato paste
  • 6 cups chicken stock


  1. In a large dutch oven style pan, heat 2 tablespoons of olive oil, add the chopped onions and garlic, as well as all the spices (except the bay leaves) and sauté for about 3-4 minutes.
  2. Remove the sausages from their casings into the pan, using a spatula, break up the sausage into ground beef style pieces, cook with the onions, garlic, and spices until its completely cooked through.
  3. Add the entire bag of spinach, and the cup of cauliflower rice to the mixture and continue to sauté all ingredients together until the spinach is completely cooked.
  4. Add the can of diced tomatoes, bay leaves, chicken stock, tomato paste and gnocchi (if you are opting to add the pasta).
  5. Stir all ingredients, until they are well combined, bring the soup to a low simmer for about 15 minutes, stirring occasionally to make sure nothing is sticking to the bottom.
  6. Serve hot with & garnish with parmesan cheese.
