Ingredients:
- 5-6 links (one package) of sweet Italian sausage, you can use the spicy Italian sausage if you like it hot.
- 1 bag fresh spinach
- 1 can diced tomatoes
- 1 onion, chopped
- 4 cloves of garlic, minced
- 1 cup of cauliflower rice
- 1 package of gnocchi pasta (optional)
- 3 tablespoons of dried basil
- 1 tablespoon of oregano
- 1 tablespoon of thyme
- 2 bay leaves
- Salt and pepper to taste
- 3 tablespoons of tomato paste
- 6 cups chicken stock
Directions:
- In a large dutch oven style pan, heat 2 tablespoons of olive oil, add the chopped onions and garlic, as well as all the spices (except the bay leaves) and sauté for about 3-4 minutes.
- Remove the sausages from their casings into the pan, using a spatula, break up the sausage into ground beef style pieces, cook with the onions, garlic, and spices until its completely cooked through.
- Add the entire bag of spinach, and the cup of cauliflower rice to the mixture and continue to sauté all ingredients together until the spinach is completely cooked.
- Add the can of diced tomatoes, bay leaves, chicken stock, tomato paste and gnocchi (if you are opting to add the pasta).
- Stir all ingredients, until they are well combined, bring the soup to a low simmer for about 15 minutes, stirring occasionally to make sure nothing is sticking to the bottom.
- Serve hot with & garnish with parmesan cheese.
