• Cooked chicken breast, chopped into small cubes
  • Cooked brown rice or zucchini noodles
  • Chopped kale
  • Carrots, shredded
  • Sliced red bell peppers
  • Sliced purple cabbage
  • Sliced radishes
  • Sliced cucumber
  • Avocado
  • Chopped green onions
  • 1/4 cup creamy peanut, cashew, or almond butter
  • 3 Tbsp rice wine vinegar
  • 2 Tbsp soy sauce
  • 1/2 tsp ground ginger
  • 1/4 tsp garlic powder
  • Lime juice, optional


  1. In a blender, combine the nut butter, rice wine vinegar, soy sauce, ginger, & garlic powder, blend until very smooth. (if necessary, add water as you are blending to thin the sauce).
  2. Assemble your bowl by layering all the ingredients as desired, top with sauce, and lime juice.  Enjoy!
