Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut sugar
  • 2 teaspoons pumpkin pie spice
  • teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 tablespoons coconut flour
  • 2/3 cup canned pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil melted
  • 1 1/2 tablespoons maple syrup
  • 1/2 cup mini semi sweet chocolate chips

Instructions:

  1. Preheat your oven to 350F.
  2. Line a cookie sheet with parchment paper.
  3. Combine all the dry ingredients in a large bowl, mixing well until fully combined.
  4. Whisk together all wet ingredients, mixing well until fully combined (using a hand mixer is preferred).
  5. Combine the wet ingredients and the dry ingredients, mixing well until dough forms.
  6. Fold in chocolate chips.
  7. Scoop about 2 tablespoons of dough at a time, rolling each one into a ball and flattening with a spoon or the palm of your hand on the cookie sheet.
  8. Bake for about 23-25 minutes, or until cookies are set.
