INGREDIENTS:

  • 1 cup almond flour
  • 1/2 cup avocado (mashed)
  • 1/4 cup maple syrup
  • 3 tablespoons cocoa powder
  • 2 tablespoons coconut oil
  • 1 tablespoon water
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/4 cup dark chocolate chips (or peanut butter chips, or both!!!)

DIRECTIONS:

  1. Preheat oven to 350F.
  2. Grease a muffin pan with coconut oil.
  3. Add all ingredients, except the chocolate/peanut butter chips, into a large bow, and blend with a hand mixer until smooth.
  4. Spoon the mixture into the muffin pan, then sprinkle the chocolate and/or peanut butter chips on top of each muffin.
  5. Bake at 350F for 25-30 minutes until a toothpick when inserted to the middle of a muffin comes out clean.
